Candied
Sweet Potatoes With Cranberries
(serves 4)
Ingredients
4 medium sweet potatoes, boiled and peeled
1/3 cup brown sugar
1/3 cup white sugar
2 tablespoons water
1/4 teaspoon cinnamon
a pinch of nutmeg
1/2 teaspoon vanilla
2 tablespoons butter
1/4 cup toasted pecans
1/4 cup fresh cranberries (optional)
Directions
Preheat oven to 350 degrees.
Put cooked and sliced sweet potatoes
and cranberries in a buttered glass casserole dish. In a saucepan,
mix together brown sugar, white sugar and water; bring to a boil.
Stir in cinnamon, nutmeg, vanilla and butter. Pour over sweet
potatoes. Bake for 30 minutes or until syrup is desired thickness.
Spoon syrup over potatoes several times while cooking. Top with
toasted pecans.
