Sweet
& Sour Vegetables
Ingredients
3 cups fresh broccoli
florets
2 medium carrots, diagonally sliced
1 large red bell pepper, cut into short thin strips
1/4 cup water
2 teaspoons cornstarch
1 teaspoon sugar
1/3 cup pineapple juice
1 tablespoon soy sauce
1 tablespoon rice vinegar
1/2 teaspoon sesame oil
1/4 cup sliced green onions, diagonally sliced
Directions
Combine broccoli, carrots
and red pepper in a large skillet with a tight fitting lid.
Add water and bring to boil over high heat. Cover and reduce
heat to medium. Steam for 4 minutes till vegetables are
crisp and tender. Drain vegetables in a colander.
In a small bowl
combine cornstarch and sugar. Blend in pineapple juice,
soy sauce and rice vinegar until smooth. Add pineapple mixture
to the same skillet that the vegetables were cooked in.
Cook sauce for 2 minutes or until it boils and thickens.
Add vegetables to skillet and toss with the sauce. Stir
in sesame oil and garnish with green onions.
