Potato
& Cheese Pancakes With Apple Sauce
(makes
18 cakes)
Ingredients
2
cups mashed potatoes
1/2 cup grated cheddar cheese
2 tablespoons flour, sifted
1 egg, lightly beaten
1/2 teaspoon ground nutmeg
2 to 3 tablespoons olive oil
Directions
In
a large bowl, combine mashed potatoes, cheese, flour, egg,
and nutmeg; don't over mix. In heavy skillet heat oil; spoon
in tablespoons of the potato mixture. Cook over medium high
heat for 5 minutes; turn cakes over and cook another 5 minutes.
Potato cake should be golden brown. Top with applesauce;
serve immediately.
Apple
Sauce
Ingredients
2 large apples, peeled, cored and cubed
2 tablespoons water
2 tablespoons chopped fresh mint
1 tablespoon white vinegar
Directions
Place apples in a small pan; add water, cover and cook over
low heat until apples are tender and all the water is evaporated.
Mash apples well with a fork; add mint and vinegar. Stir
until well combined.
