Mashed Sweet
Potatoes

Ingredients
3 pounds sweet potatoes
4 tablespoons butter
2 tablespoons brown sugar
1 teaspoon salt
1/2 teaspoon grated orange peel
fresh ground pepper
1 tablespoon spiced or dark rum (optional)
Directions
Peel and cut potatoes into chucks. Place potatoes into a large
saucepan; cover with water. Cook potatoes until they are fork
tender and drain. Return potatoes to the saucepan or mixer bowl.
Add butter, brown sugar, salt, pepper, and orange peel. With a
potato masher or paddle, mash until well blended. Stir in rum
and serve.
