Ingredients
3 whole ears of corn cut in 1 1/4-inch rounds
2 tablespoons butter, melted
1 tablespoon tomato paste
2 tablespoon chopped cilantro
1/4 teaspoon chili powder or to taste
Sour cream to serve
Directions
Fill a large pan half full of water, bring to a boil and add corn.
Reduce heat; simmer until corn is tender or about 10 minutes.
Drain.
Combine butter, tomato paste, cilantro,
and chili powder in a large bowl. Add corn and mix well. Serve
immediately with sour cream.
