New Potatoes
Ingredients
2 lb red potatoes
1/4 cup olive oil
2 garlic cloves, crushed
1 teaspoon fresh dill, or 1/2 teaspoon dried
1/4 teaspoon pepper, red, flakes
1/8 teaspoon salt, kosher
1/8 teaspoon pepper to taste
3 tablespoons Parmesan or Romano, grated
Directions
Preheat oven to 400 degrees.
Combine the oil, garlic, dill,
pepper flakes in a bowl and allow to sit for 1 hour. Cut
the potatoes into 1/2-3/4 inch dice. Oil an appropriate
sized oven proof baking dish add potatoes. Distribute the
oil mixture over top and toss, making sure the potatoes
are covered. Add salt and pepper then distribute the potato
in a single layer in the dish. Add water to the baking dish
until it comes about 1/3 up the side of the potatoes. Cover
the whole with the cheese and bake for 45 minutes. At the
end of that time, turn on the broiler and broil potatoes
for an additional 3 minutes.
