Holiday Baking

When we think of the holidays, we think of baking cookies, cakes, and breads. Baking is not an improvisational art so here are a few tips to get you through the baking holidays without a lot of heartache!
* Read your recipe all the way before you start baking.
* Always preheat your oven.
* Measure your ingredients before you start mixing.
* Use the best ingredients: Unsalted butter, pure vanilla and other extracts, fresh unsalted nuts, dried fruit should be plump and moist, large fresh eggs, good chocolate and spices.
* Eggs and butter should come to room temperature before using. If butter is to cold or to warm it can change the temperature of the dough or batter and can alter the baking time.
* Last of all take your time and have FUN!
