When you are picking out your eggplant
look for a shiny, plump and heavy one. Overripe eggplants will
lose their shine. Do not buy an eggplant that has any bruises
or that is scarred in any way. The stem or the cap of the eggplant
should not have any mold and look fresh.
Eggplants keep refrigerated for up
to 2 days.
