How do you get the best flavor out of your herbs?

When you are using dried herbs, crush them after measuring them to release their flavor.

Dried herbs have a more intense flavor than fresh so keep in mind the following:

For such herbs as basil, mint, oregano, and savory, use a teaspoon of dried for each tablespoon of fresh.

For stronger herbs such as rosemary, sage, tarragon, dillweed and thyme, use 1/2 teaspoon of dried for each tablespoon of fresh.
