Perfect Pie Crust

Tender, flaky, perfect. Those are the words you want to describe your pie crust. Here are a few tips to follow so that you can hear those three little words whispered at your Thanksgiving Day table.
* Use good unbleached flour and unsalted butter.
* Keep pastry ingredients cold.
* Handle dough as little as possible.
* Chill dough before rolling.
* Roll on cold surface, and brush off excess flour from board, pin and pastry.
* For crisp crust, bake in metal pie pan.
