Dried Beans!

For time's sake, canned beans are easier, but whenever possible use dried beans. Follow the instructions below, and then you can put these yummy legumes in your favorite dish.

Soak dried beans overnight in cold water; drain and rinse well. Place in a large pan, cover with water and cook over low heat for 40 to 50 minutes or until tender. To test beans, remove one or two from water and press between fingers. Beans should be soft but not mushy.

About 1 pound or 2 1/2 cups of dried beans makes 6 cups of cooked beans.
