Al dente is Italian for "to
the tooth," a term for perfect doneness of pasta.
Pasta should be cooked just enough
to maintain a firm texture and be a little chewy. Overcooked pasta
is soft and starchy. Always remember that pasta will continue
to cook, even after it is drained.
