Chili
(serves 6)
Ingredients
1 1/2 pounds boneless pork, cut into 1/4 inch cubes
1 tablespoon vegetable oil
1 onion, coarsely chopped
2 cloves of garlic, minced
1 15 ounce can of black, pinto, or kidney beans, drained
1 can of Chili chunky tomatoes
1 can diced green chiles
1 teaspoon cumin
Directions
In a large skillet, add oil and brown pork over medium heat. Add
onion and garlic; cook until onion is tender. Season with salt
and pepper. Add beans, tomatoes, chiles, and cumin. Simmer for
10 minutes, stirring occasionally.
