Oyster
Soup
(serves 4)
Ingredients
1 small onion, diced
1/4 bell pepper, diced
2 stalks celery, finely diced
2 tablespoons butter
2 tablespoons margarine
3 dozen oysters with juice
1 tablespoon minced green onion tops
2 tablespoons minced parsley
1 quart milk, scalded
salt and pepper to taste
Directions
Stir and cook onion, bell pepper, and celery in butter and
margarine until tender. Add oysters including juice, and
simmer 10 minutes. Add green onion tops and parsley. Simmer
for 5 minutes. Stir in milk. Season with salt and pepper
to taste; simmer for 1 minute.
