Gazpacho
Ingredients
6 large tomatoes, peeled
1 cucumber
1 green pepper
1 onion
1 clove garlic
1 tablespoon parsley
2 can V-8 juice
3 tablespoon olive oil
2 tablespoons vinegar
dash of Tabasco sauce
sat and pepper
garnish: sour cream, avocado, croutons
Directions
In a food processor or blender, add tomatoes, cucumber, green
pepper, onion, parsley, and garlic; blend until chopped. Pour
mixture into a pitcher; add V-8 juice, olive oil, vinegar, salt
and pepper and a dash of Tabasco sauce. Stir and refrigerate for
at least 4 hours. Serve in bowls with garnishes.
