Vegetarian Chili
(serves 6)
Ingredients
1 c. chopped onion
1 c. chopped celery
1 c. chopped green bell pepper
1 clove minced garlic
1 1/2 c. chopped zucchini
1-(16 oz.) can stewed tomatoes
1-(16 oz.) can whole tomatoes,
cut-up
1-(16oz.) can tomato sauce
1-(1.25 oz.) pkg. chili seasoning
2-(16 oz.) cans chili beans,
undrained
Directions
Cover bottom of a large saucepan, or Dutch oven with 3 to
4 T. water. Add onions, celery, green pepper and garlic.
Saute until wilted; 3 to 4 minutes. Add zucchini and cook
until tender, 5 to 10 minutes. Add the remaining ingredients;
simmer one hour.
