Corn
Chowder
(makes 4 servings)
Ingredients
1/2
cup finely chopped bacon
1 onion, chopped
1/2 cup celery
1 1/2 cup diced potatoes
2 cups water
1 bay leaf
1 teaspoon salt
1/4 teaspoon pepper
2 cups milk
1/2 cup whipping cream
2 cups fresh or frozen corn
1 1/2 tablespoons flour
Directions
In
a saucepan, saute bacon until browned. Stir in onion and
cook 2 minutes. Add celery, potatoes, water, bay leaf and
salt; simmer gently until potatoes are tender, about 20
to 30 minutes.
In
a small bowl, mix flour and 1 tablespoon of milk; stir until
smooth and add to potato mixture. Add remaining milk and
stir. Heat soup until it thickens; slowly add cream and
corn. Heat mixture slowly. Add pepper, stir and serve.
