Black
Bean Soup
(serves
2 to 4)
Ingredients
4 tablespoons
of olive oil
1 onion, chopped
1/2 cup chopped green pepper
3 teaspoons garlic, finely chopped
2 carrots, chopped finely
1 teaspoon jalapeno, chopped finely
1 teaspoon cumin
1 15 ounce can black beans, not drained
2 cups chicken broth
2 teaspoons lemon juice
1 tablespoons cilantro, finely chopped (optional)
sour cream and chopped green onion for garnish
Directions
In a
large sauce pan, heat oil and add onions; saute for 1 minute.
Add garlic; saute for 1 more minute. Add green peppers, carrots,
jalapeno and saute for 4 minutes. Add cumin, black beans and chicken
broth to vegetables; cook for 20 minutes or till vegetables are
tender. Add lemon and cilantro and cook for 1 minute more. Garnish
with sour cream and green onion.
