Slaw
(Serves 10)
Ingredients
1 pound cabbage, shredded
1 cup carrots, grated
1/2 broccoli florets
1/2 cup cheery tomatoes, halved
1/2 cup celery, sliced
1/2 cup cucumber, peeled, seeded, and diced
1 cup parsley, chopped
1/3 cup olive oil
2 tablespoons vinegar
1 tablespoon Dijon mustard
1 teaspoon garlic salt
Directions
In a large bowl, combine cabbage, carrots, broccoli, celery, tomatoes,
and cucumber. In a small bowl, whisk together remaining ingredients.
Pour dressing over vegetables and toss well. Let marinate at least
2 hours before serving.
