Tuna
Pasta Salad
(serves 6)
Ingredients
1/2 pound Greek olives, drained and cut into pieces
7 ounce can of tuna packed in olive oil, drained
1 cup olive oil
salt and pepper to taste
1 pound ripe tomatoes, cut into cubes
1 pound fusilli or rigatoni pasta, cooked until al dente
and drained
1/2 teaspoon fresh lemon juice
4 tablespoons capers in wine vinegar (optional)
Directions
In a small bowl, break
up tuna into pieces; add olives, olive oil, capers, salt
and pepper. Mix well.
Place cooked pasta
in a large bowl; add tuna mixture and lemon juice. Toss
well. Add tomatoes and toss again.
