Potato Salad
(Serves 8)
Ingredients
1/4 cup olive oil
2 tablespoons vinegar
1 1/2 teaspoon salt
1/8 teaspoon pepper
4 cups potatoes, sliced, hot and cooked
1 cup ripe olives, chopped
2 hard boiled eggs, chopped
1 cup celery, chopped
1/4 cup dill pickle, chopped
1/4 cup pimento, chopped
1 small onion, chopped
1/2 cup mayonnaise
Directions
In a small bowl whisk together oil, vinegar, and pepper.
Pour dressing over hot potatoes; set aside to cool. When
potatoes have cooled add remaining ingredients. Chill for
a least 1 hour before serving.
