Potato Bacon
Salad
(serves 5)
Ingredients
2 pounds red potatoes, cooked and cut into chunks
1/2 cup green pepper, chopped
1/2 red onion. Sliced thinly
6 slices bacon, cooked and crumbled
1/3 cup mayonnaise
1/3 cup Dijon mustard
2 tablespoons red wine vinegar
2 tablespoons parsley
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
Directions
In a large bowl, combine potatoes,
green pepper, red onion, and bacon; set aside. In a small bowl
or jar with lid, blend mayonnaise, mustard, vinegar, parsley,
garlic powder, and oregano. Pour over potato mixture, tossing
to coat well. Cover and chill at least 2 hours.
