Panzanella
Salad
(Serves 4)
Ingredients
1 small loaf of day old
Italian or country style bread, cut into 1/2 cubes
8 ripe tomatoes, cut into 1/2 cubes
1 red onion, diced
2 tablespoons red wine vinegar
3 tablespoons olive oil
1 cup fresh basil, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
Directions
In a large salad bowl, whisk together vinegar, oil, basil,
salt and pepper.
Add bread, tomatoes, and onion. Toss until everything is
well coated. Serve.
