Macaroni
Salad With Sun-Dried Tomatoes
(serves 4 to 6)
Ingredients
1/2 elbow macaroni, cooked
and drained
3/4 cup mayonnaise
3 tablespoons oil-packed sun-dried tomatoes, drained and
chopped
2 tablespoons chopped fresh basil
2 teaspoons fresh lemon juice
1/3 cup onion, diced
1 cup celery, chopped
1/4 cup ripe olives, chopped
salt and pepper to taste
Directions
In a large bowl combine mayonnaise, tomatoes, basil, lemon
juice, and onion. Add macaroni, celery, and olives; toss
to coat. Season with salt and pepper. Cover and refrigerate
for at least 1 hour before serving.
