Bean
& Tomato Salad
(makes
4 main course servings)
Ingredients
3/4 pound fresh green
beans, blanched and ends trimmed
2 fresh medium tomatoes, cut into wedges
1 can cannelli beans, drained and rinsed
Dressing:
2 tablespoon olive oil
1 tablespoons fresh lemon juice
1 medium shallot, finely chopped
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
Directions
In a large bowl whisk together oil, lemon juice, shallot,
mustard, salt and pepper. Add tomato wedges, green beans
and cannellini beans; toss until everything is coated.
