& Shrimp
Ingredients
1 lb. peeled & deveined shrimp
1 diced tomato
1/2 cup Spanish olives
1 tablespoon minced garlic
2 green onions
Juice of 1 lemon
1 cup of white wine
4 slices of crisp bacon
2 tablespoons of butter*
cooked linguine
Directions
In a skillet, add butter, shrimp and garlic. Saute shrimp
and garlic until they start to brown. Next add lemon juice
and white wine. Cook until liquid reduces by half. Then
add tomato, sliced olives, and onion. Cook until veggies
are warm through. Serve mixture on top of hot linguine and
top with crumbled bacon. This recipe is wonderful, quick,
and low in fat.
*Can sub olive oil for butter.
