Eggplant
Bake
(serves 6)
Ingredients
4 ounces bow tie pasta, cooked
1 pound eggplant, diced
1 clove garlic, minced
1/4 cup olive oil
1 1/2 cups shredded Mozzarella cheese
1cup green onion
1/2 cup grated Parmesan cheese
1 can diced tomatoes
Directions
Preheat oven to 350 degrees.
In a large skillet, cook eggplant
and garlic over medium heat until eggplant is tender. Toss eggplant
with cooked pasta, 1 cup cheese, green onions, and Parmesan cheese.
Place in a 9 inch square baking dish.
Top with remaining cheese. Bake for 15 minutes or until heated
through.
