Spicy Pork Chops With Corn Salsa
(serves 4)

Ingredients
4 center cut pork chops
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1 1/2 teaspoon oregano
2 teaspoons fresh black pepper

Corn Salsa
2 teaspoons canola oil
1 can black beans, drained and rinsed
2 large tomatoes, cut into 1" pieces
1 avocado, cut into 1" chucks
1 can of 5 oz. Corn, drained
2 jalapeno peppers, minced
1/2 teaspoon salt
2 tablespoons lime juice
4 tablespoons fresh cilantro

Pork Chop Directions
In a small bowl, combine black pepper, oregano, cayenne pepper, and salt.

Rub both sides of the pork chops with the spice mixture. In a large skillet, add oil over medium heat; add pork chops and cook for 8 to 9 minutes per side or until no longer pink inside.

Corn Salsa Directions
In a large bowl, combine beans, tomatoes, avocado, corn, jalapenos, lime juice, cilantro and salt. Serve over hot pork chops.
