Racks Of Lamb
Ingredients
2 racks of
lamb*
1 cup parsley, finely chopped
1 medium onion, finely chopped
1 tablespoon fresh dill chopped
1/4 cup fine dry bread crumbs
2 teaspoons fresh oregano, chopped
1 teaspoon salt
1/2 teaspoon fresh ground pepper
*Let lamb racks sit at room temperature
for 20 minutes before starting.
Directions
Preheat oven to
425 degrees.
Combine all ingredients except lamb.
Pat herb and bread crumb mixture over lamb. Place rack in a shallow
roasting pan. Roast for 30 minutes for medium rare.
