Sole
With White Wine Sauce
Ingredients
4
fillets of sole
1 cup dry white wine
1/2 cup fish stock or water
2 sprigs parsley
1 sprig thyme
2 tablespoons minced onion
1/2 teaspoon salt
3 black peppercorns
Directions
Place
sole in a single layer in a 10 inch heavy skillet. Add wine
and enough fish stock to cover the fish; add parsley, thyme,
onion salt and peppercorns. Over a high heat bring to a
boil; reduce heat to low. Simmer until sole almost flakes,
about 3 to 4 minutes. Place sole on a heated serve platter
and cover with foil. Strain liquid from the fish and add
more stock if needed to equal a cup.
White
Wine Sauce
Ingredients

tablespoons butter
2 tablespoons flour
1/2 cup heavy cream
1/2 teaspoon salt
1/2 teaspoon white pepper
2 tablespoons minced parsley
Directions
Melt
butter in a medium sauce pan. Blend in flour and stir for
3 minutes. Slowly whisk in fish liquid, cream, salt and
white pepper. Cook, whisking constantly, until thickened
and smooth. Pour sauce over fish; garnish with minced parsley.
