Sauteed Scallops
(serves 4)

Ingredients
1/4 cup olive oil
1 pound bay scallops, rinsed and dried
1/2 cup chopped scallions
1 clove garlic, minced
1/2 cup dry white wine
1 tablespoon chopped fresh thyme
1/2 teaspoon salt
1/4 teaspoon pepper

Directions
In a large skillet, heat oil over medium heat; add scallops and saute until they begin to turn opaque (about 1 to 2 minutes). Turn scallops and saute for another 1 to 2 minutes. Remove scallops from pan and keep warm.

In the skillet, saute scallions, and garlic just until tender. Add wine, thyme, salt and pepper; bring to a boil on high heat and reduce liquid by half. Return scallops to skillet and heat through.
