Mustard Chicken
(serves 4)

Ingredients
4 half chicken breasts
4 tablespoons butter
flour
2 tablespoons oil
Dijon mustard
1 medium onion, chopped
1 cup mushrooms
2 tablespoon fresh chopped parsley
salt and pepper
1 cup heavy cream
1 teaspoon lemon juice

Directions
Melt butter and oil in saute pan. Lightly dust chicken with flour and add to pan. Brown chicken on all sides; remove from pan and let cool. Spread chicken with Dijon mustard.

Cook onion until golden in the same pan with the remaining oil. Add mushrooms, parsley, salt and pepper to taste; cook till mushrooms are done. Add heavy cream and heat through.

Place chicken breasts in shallow baking pan; pour cream sauce over chicken. Bake at 350 degrees for 30 to 40 minutes. Place chicken on serving platter. Mix lemon juice to the sauce; pour over chicken and serve.
