Hunters
Chicken
(serves 6)
Ingredients
1/2 cup butter
1 cup minced onion
1 cup chopped fresh parsley
2 1/2 to 3 lbs. chicken
1 cup water
1 cup sliced mushrooms
1 tablespoon dry basil
1 1/2 teaspoon rosemary
1 bay leaf
salt and pepper to taste
1/2 cup dry white wine
Directions
In a large skillet, sauté onions in butter until soft.
Add parsley and cook one minute. Add chicken and cook until brown.
Add mushrooms, water, basil, rosemary, bay leaf, salt and pepper;
cover and simmer for 20 minutes. (Chicken should be tender.) Add
the white wine and simmer another 15 minutes. I like to serve
this with hot buttered noodles.
