Shrimp Scampi
(serves 6)
Ingredients
2 pounds large
shrimp, deveined
1/4 pound unsalted butter, melted
1/2 cup olive oil
1 tablespoon minced shallots
3 large cloves of garlic, coarsely chopped
1 teaspoon salt
2 tablespoon fresh lemon juice
1/4 cup minced parsley
salt and pepper
Directions
Wash shrimp in cold water and
dry well. In a large bowl, combine butter, olive oil, shallots,
and garlic. Roll shrimp into the butter mixture until well
coated; sprinkle with lemon juice and parsley. Marinate
for at least 30 minutes, turning shrimp several times.
Remove shrimp
from bowl. Pour marinade in a small sauce pan; keep on a
warm flame. Grill shrimp until they turn pink; sprinkle
with salt and pepper. Place shrimp on a platter; spoon heated
marinade over shrimp. Garnish with parsley sprigs and serve.
