Grilled Salmon With Lemon Basil Butter
(serves 2)

Ingredients
2 boned and skinned salmon portions (6 oz. each)
1/2 stick of butter (softened)
juice from 1 lemon
1 tablespoon of fresh basil or 1 teaspoon of dry basil
salt and pepper

Directions
Pre-heat grill. Salt and pepper both sides of salmon and set aside. In small bowl, mix butter, juice from 1/2 of a lemon and basil. Take a piece of foil big enough to cook the fish on, spray it with cooking spray and with a fork pierce holes all over foil.

Let foil heat on grill for one minute and then place fish on foil. Squeeze other 1/2 of lemon over fish and cook 5 minutes. Turn the fish and cook another 5 to 7 minutes. The fish will be pink and flaky when done.

Before you take the fish off of the grill, spread a little basil butter over each piece of fish and let melt. Use the rest of the basil butter as a spread for the salmon at dinner.
