Fall Chicken
Ingredients
4 bone in chicken breasts
2 to 3 fresh tomatoes, 1/8 wedges
3 to 4 potatoes, cut into chunks
2 onions, cut into chucks
1 green pepper, seeded and cut into chucks
1 teaspoon thyme
1 teaspoon rosemary
2 to 3 tablespoons olive oil
salt and pepper
Directions
Preheat oven to 375 degrees.
Coat bottom of a large
baking dish or roasting pan with oil; add potatoes, tomatoes,
and onions and toss in the oil. Season vegetables with salt and
pepper. Place chicken on top of the vegetables; sprinkle rosemary,
thyme, salt and pepper over chicken. Cover with foil and bake
for 45 minutes. Remove the foil and baste chicken
and vegetables with juice. Continue baking until the chicken is
done and the vegetables are golden brown, about another 15 or
20 minutes.
* After you have removed
the foil, you may want to drain some of the juices so that the
vegetables can roast.
* You may also add any
other vegetables that would be good roasted.
