Ingredients
4 catfish fillets (you can actually use any fish for this)
1.5 cups milk
2 teaspoons corn starch
2 ounces butter
4 ounces blue cheese
salt and pepper to taste
Directions
Heat up a skillet sprayed with
low fat oil and put in fillets when the pan gets really
hot. While they are cooking and browning, prepare the white
sauce by placing all the ingredients, except for the cheese,
in a microwave bowl and whip mix together. Cook on high
heat and remove every minute or so to blend with a whisk.
When you have a blended sauce, crumble the blue cheese into
it until it is melted. Pour over the cooked and browned
fish and serve with a fresh green salad and some warm crusty
bread.
