Three
Tomato Salsa
(serves 6)
Ingredients
3 tablespoons olive oil
1/2 small red onion, peeled and diced
1/3 cup dry white wine
8 tomatillos, cored, and diced
4 ripe tomatoes, seeded and diced
1 pint yellow cherry tomatoes, seeded and diced
Salt and white pepper to taste
6 fresh basil sprigs, minced
Directions
Heat the oil in a saute pan over medium-high heat. Add the
onion and saute 2 minutes. Add the white wine and tomatillos,
stir to combine; remove from heat. Add the red and yellow
tomatoes to the pan while the mixture is still warm. Season
to taste with salt and pepper, add the basil; allow to stand
at least 20 minutes before serving for the flavors to blend.
Drain the juices from the relish before serving.
