Sweet & Sour Sauce

Ingredients
1 tbsp vegetable oil
1/4 cup died green bell pepper
1/4 cup diced red bell pepper
1/4 cup finely chopped onion
1 1/4 cups water
2 tablespoons cornstarch
2 tablespoons firmly packed brown sugar
2/3 cup unsweetened pineapple juice
1 6 oz. Can no salt tomato paste
1/2 cup no sugar added pineapple tidbits, canned in natural juices
1/4 teaspoon salt dash hot pepper sauce

Directions
Heat oil in a small nonstick skillet over medium high heat. Add green and red bell peppers and onion, and sauté until onion is translucent. Set aside. Combine water, cornstarch, brown sugar and pineapple juice in a saucepan. Bring to a boil over medium high heat. Whisk in tomato paste. Add pineapple, sautéed vegetables, salt and hot pepper sauce. Stir to mix well. Cook until thoroughly heated.
