Mango
Vinaigrette
(makes
about 1 quart)
Ingredients
2 very ripe mangos pealed and seeded
1/4 cup rice wine vinegar
1/2 cup grape seed oil, peanut oil will do if you cant find
the other
1/4 teaspoon cayenne pepper
Directions
in a blender or food processor place mangos, vinegar and
cayenne and puree till smooth; then slowly add the oil till
well blended. This works great for a marinade or a salad
dressing.
