Vegetable Sauce
(makes 1 cup)
Ingredients
1/4 cup olive oil
2/3 cup dry sherry
1-1/2 cups fine-chop celery
3 cups fine-chop onion
1/2 cup fine-chop red bell pepper
6 cloves minced garlic
2-1/2 teaspoon cayenne or chile powder
1 tablespoon spicy mustard
1 tablespoon honey
6-oz. can tomato paste
1/3 cup ketchup
1/2 lemon, slice and seeds removed
Directions
Put oil and sherry in a large saucepan over medium heat. Add garlic,
onion, bell pepper and celery; sauté for a half hour to
40 minutes stirring frequently. Add remaining ingredients and
gently simmer for about 2 hours. Remove from heat, and when cool,
puree or process. Add salt and pepper to taste.
