Chewy Brownie
Ice Cream Sandwiches
Ingredients
1 1/2 cups packed light brown sugar
2/3 cup Crisco shortening
1 tablespoon water
1 teaspoon vanilla
2 eggs
1 1/2 cups all purpose flour
1/3 cup cocoa
1/4 teaspoon baking soda
1/2 teaspoon salt
2 cups semi-sweet chocolate chips (12-ounce bag)
Directions
Preheat oven to
375 degrees.
In a small bowl, combine
flour, cocoa, salt and baking soda and set aside.
In a large bowl, combine
shortening, brown sugar, water, and vanilla; beat on medium speed
until well blended. Add eggs and beat until combined. Mix flour
mixture into eggs mixture and mix on low until combined.
Drop rounded tablespoons
of dough about 2 inches apart on an ungreased cookie sheet and
bake for 7 to 9 minutes. Cool for 2 minutes on cookie sheet. Remove
from cookie tray and cool completely on rack.
After cookies have cooled,
take a teaspoon of ice cream and put it on the bottom of one cookie
and top with another. Place in freezer until you are ready to
serve.
