Homemade Vanilla Ice Cream
(makes 1 quart)

Ingredients
1 3/4 cups milk
2 1/4 cups heavy cream
1 cup sugar
1 vanilla bean, split lengthwise
1/4 teaspoon salt
6 egg yolks

Directions

In a saucepan, scald milk and cream with 1/2 cup sugar, vanilla bean and salt until small bubbles appear; remove from heat.

In a bowl, whisk egg yolks and remaining sugar. Add a little of the cooked milk mixture to the yolks. Then add the egg mixture to the cream mixture and cook over low heat, whisking constantly, till mixture coats a spoon. This will take about 15 minutes.

Remove custard from heat and cool to room temperature. Scrape the vanilla seeds from the pod; throw pod away. Cover the custard and refrigerate until cold.

Follow ice cream makers instructions for making the ice cream and freezing.
