Blueberry Lime Mold
(serves 8-10)

Ingredients
1-(3oz.) box lime gelatin
1 T. sugar
2 T. lime juice
1 1/2 c. boiling water
1-(8 oz.) tub cool whip, thawed
1 pint fresh blueberries

Directions
In a medium bowl, combine the gelatin, sugar, lime juice and boiling water; stirring until the gelatin and sugar are dissolved. Chill about 1 hour, or until slightly thickened. Beat the gelatin (with an electric mixer) until light in color, and doubled in volume. Beat in the cool whip, then gently fold in the blueberries. Pour into an oiled 5-6 cup gelatin mold. Cover and chill 3 to 4 hours, or until firm. Unmold and serve.
