Pumpkin Bars
Ingredients
2/3 cups butter
1 1/2 cups sugar
3 eggs
2 cups fresh mashed pumpkin
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon cinnamon
1 1/2 teaspoon ginger
Directions
Cream butter and sugar until soft and fluffy. Blend in eggs and
pumpkin. Add dry ingredients and mix thoroughly.
Pour into greased 15 1/2 x 10 1/2
jelly roll pan and bake for 30 to 35 minutes. Cool and frost with
Creamy Vanilla Frosting.

Frosting
Ingredients
1/3 cup butter
1 teaspoon vanilla
4 1/2 cups powdered sugar
1/2 cup evaporated milk
a pinch of salt
Directions
Cream butter; add vanilla and salt. Blend in sugar and milk. Beat
until creamy.
