Chocolate,
Fruit & Nut Cookies
Ingredients
1 1/4 cup butter, softened
2 cups sugar
2 eggs
2 teaspoon vanilla
2 cups flour
3/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2 cups white chocolate chips (or semisweet)
1 cup chopped dried apricots
1 cup coarsely chopped macadamia nuts
Directions
Preheat oven to 350 degrees.
Beat butter and sugar until light
and fluffy. Add eggs and vanilla; beat well. Ina separate bowl,
combine flour, cocoa, baking soda and salt; blend into butter
mixture. Stir in chocolate, apricots, and nuts. Using a 1/4 cup
measuring cup, drop dough onto cookie sheet. Bake 12 to 14 minutes
or until set. Cool slightly & remove from cookie sheet.
