Coffee Cookies
(makes 3.5 dozen)
Ingredients
1/2 cup sugar
1/2 cup packed brown sugar
1/3 cup shortening
1 egg
1 tablespoons milk
1 1/2 teaspoon vanilla
1 1/2 cups flour
2 tablespoons instant coffee powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon baking powder
Directions
Preheat oven to 400 degrees.
Mix together sugars, shortening,
egg, milk and vanilla. Stir in remaining ingredients. Shape
dough into 1 inch balls. Place about 2 inches apart on ungreased
cookie sheet. Flatten to 1/8 inch thickness with greased
fork dipped in sugar (press only in one direction) or with
greased bottom of glass dipped in sugar. Bake until light
brown, 7 to 8 min.
