Pineapple
Carrot Cake
Ingredients
2 cups
all purpose flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 1/2cups vegetable oil
2 cups sugar
1-8 ounce can crushed pineapple
2 cups grated carrots
4 eggs
Chopped pecans for garnish
Directions
Preheat
oven to 350 degrees.
Sift all dry ingredients and set aside. In a mixing bowl, beat
oil and sugar; add eggs, one at a time. Add dry ingredients; mix
well. Add carrots and pineapple mix until combined. Pour into
two 9 inch cake pans that have been buttered and floured. Bake
for 45 to 50 minutes or until tester comes out clean. Let
cool completely before frosting.
Cream
Cheese Frosting
Ingredients
1/4
cup butter, softened
1 8 ounce package of cream cheese
1 box of confectioners sugar
1 1/2 teaspoons vanilla
Directions
In a
large mixing bowl, beat all ingredients until smooth and creamy.
