Peanut Butter
Cake
(serves 16)
Ingredients
1/2 cup flour
1/2 cup brown sugar, packed
1/4 cup peanut butter
3 tablespoons butter
2 cup flour
1 cup brown sugar, packed
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
1/2 cup peanut butter
2 eggs
1/4 cup butter, softened
Directions
Preheat oven to 375 degrees.
Topping: In a small bowl, stir together
the first 4 ingredients. Use a pasty blender until the mixture
resembles coarse crumbs; set aside.
In a large bowl, mix together remaining
flour, brown sugar, salt, baking powder and soda. Add milk, eggs
and remaining peanut butter and butter. Beat with an electric
mixer on medium for 3 minutes.
Spoon batter evenly into greased
13x9 baking pan. Sprinkle with topping. Bake for 30 minutes or
until tester comes out clean. Cool on wire rack.
