Honey & Coconut Cake

Ingredients
1/2 cup butter
2/3 cup sugar
2 eggs, lightly beaten
1 teaspoon vanilla
1/3 cup honey
1/2 cup flaked coconut
2 1/4 cups all purpose flour
2 teaspoons baking powder
1/8 teaspoon salt
1/4 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon ground allspice
2/3 cups milkPreheat oven to 350 degrees

Directions
In a large bowl, beat together butter and sugar till light and creamy. Add eggs one at a time, beating after each one. Add vanilla and honey; beat until well combined. Add coconut.

With a large spoon, fold in flour, baking powder, salt and spices alternately with milk. Fold until just combined and mixture is almost smooth. Pour batter into greased and lined 11x7x1.25 inch cake pan.

Bake for 30 minutes or until tester comes out clean. Cool on wire rack in pan for 10 minutes before turning out on rack.

Honey Cream Cheese Icing

Ingredients
1- 8 ounce package of cream cheese
1 1/2 cups confectioners sugar, sifted
2 tablespoons honey

Directions
In a bowl, beat cream cheese until smooth; add sugar and honey. Continue to beat for 3 minutes or until smooth and fluffy. Spread on cake.
